Ingredients:
1 lb lean, minced lamb (organic if possible) 50g (2oz) finely ground bread crumbs 1 lg finely chopped onion 1 tsp fresh oregano 1 egg 1T tomato chutney Salt & Pepper Flour for dusting
In a large mixing bowl mix together the lamb, bread crumbs, onions, oregano, chutney and seasonings. Add sufficient beaten egg to bind the mixture.
With lightly floured hands, shape into medium sized burgers.
Heat a little oil in a frying pan and brown the burgers lightly on both sides. Cook in a moderate oven at 160C for 12 - 15 minutes.
Serve with a crisp green salad, homemade tomato sauce and colcannon.
